08 - Remove from oven. Top with tomatoes, red onion, jalapeños, olives, avocado, and cilantro.
09 - Drizzle with sour cream and salsa, or serve them on the side. Add pickled jalapeños and lime wedges if desired. Serve immediately while hot.

# Expert Tips:

01 -
  • The double layer technique means no sad naked chips at the bottom of the pile
  • You can prep almost everything ahead and just melt the cheese when guests arrive
  • The seasoned beef mixture actually tastes better than most restaurant versions
02 -
  • The cheese layering technique is the difference between restaurant quality nachos and sad naked chips
  • Do not add the fresh toppings before baking or you will end up with soggy tomatoes and wilted cilantro
  • Work quickly once it comes out of the oven because the cheese firms up fast
03 -
  • Warming your chips in the oven for 5 minutes before building keeps them extra crispy
  • The water in the meat mixture helps the seasoning adhere and creates a sauce that soaks into the chips
