02 - 1/2 cup granulated sugar
03 - 1/4 tsp salt
04 - 1 tsp baking powder
05 - 2 large eggs
06 - 1/4 cup milk
07 - 1/4 cup unsalted butter, melted
08 - 1 tsp vanilla extract

09 - 1 cup heavy whipping cream
10 - 2 tbsp powdered sugar
11 - 1/2 tsp vanilla extract
12 - 1 cup fresh strawberries, hulled and finely diced

→ Garnish

13 - 4 whole strawberries, thinly sliced
14 - 1 tbsp chopped fresh mint (optional)

# Directions:

01 - Preheat oven to 350°F. Line a 9x13-inch baking sheet with parchment paper and lightly grease.
02 - In a bowl, whisk together flour, sugar, salt, and baking powder until well combined.
03 - In a separate bowl, beat eggs, milk, melted butter, and vanilla extract until smooth.
04 - Pour wet ingredients into dry ingredients and mix until just combined. Do not overmix.
05 - Spread batter evenly onto prepared baking sheet. Bake for 12–15 minutes until cake springs back when touched. Cool completely.
06 - While cake cools, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
07 - Gently remove cooled cake from pan onto clean surface. Trim edges for neatness.
08 - Spread even layer of whipped cream over cake, leaving 1/2-inch border along one long side. Sprinkle diced strawberries evenly over cream.
09 - Starting from opposite long side, carefully roll cake up tightly, using parchment paper to guide. Refrigerate for 20 minutes to set.
10 - Slice rolled cake into 8 even pieces. Top each with strawberry slice and sprinkle of chopped mint if desired. Serve chilled.

# Expert Tips:

01 -
  • It combines two beloved desserts into one conversation-stopping treat that looks impressive but is secretly easy to make
  • The individual portions are perfect for parties and no one has to fight over who gets the corner piece
02 -
  • Letting the cake cool completely is non-negotiable, otherwise the cream will melt and your roll will become a sad, soggy mess
  • The parchment paper is your best friend during rolling, use it to guide and tighten the roll rather than touching the cake directly
03 -
  • A serrated knife dipped in hot water and wiped dry between cuts gives you the cleanest slices
  • Chill your mixing bowl and beaters before whipping cream for faster, better results
