# Directions:

01 - Preheat the oven to 400°F.
02 - In a skillet over medium heat, add olive oil. Sauté onion, garlic, and jalapeño for 2-3 minutes until softened.
03 - Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
04 - Stir in chili powder, cumin, smoked paprika, cayenne, salt, black pepper, and tomato sauce. Simmer for 2-3 minutes until well combined. Set aside.
05 - Arrange tortilla chips evenly on a large baking sheet or oven-safe platter.
06 - Evenly spoon the spicy beef over the chips. Sprinkle with black beans, cheddar, and Monterey Jack cheese.
07 - Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly.
08 - While nachos bake, make the guacamole: In a bowl, mash avocados, then gently mix in tomato, red onion, cilantro, lime juice, salt, and pepper.
09 - Remove nachos from the oven. Top with diced tomatoes, black olives, and green onions.
10 - Serve immediately with fresh guacamole and your choice of optional toppings.

# Expert Tips:

01 -
  • The spicy beef filling gets better the longer it simmers, so make extra for tacos later
  • Fresh guacamole takes two minutes and tastes dramatically better than store bought
02 -
  • Don't overload the chips with beef or the bottom layer will get soggy before the cheese melts
  • Let the beef cool slightly before layering or it'll steam the chips instead of melting the cheese
03 -
  • Warm your chips in the oven for 5 minutes before building to ensure maximum crunch
  • Set up a toppings bar and let everyone customize their own section
