- Dissolve the strawberry gelatin in 1 cup boiling water, stirring until completely dissolved. Stir in 1 cup cold water. Pour into a shallow dish and refrigerate for 1 hour or until fully set.
- Repeat the process with lemon gelatin: dissolve in 1 cup boiling water, add 1 cup cold water, pour into a separate shallow dish, and refrigerate for 1 hour until set.
- In a mixing bowl, beat the heavy whipping cream with an electric mixer until soft peaks form. Set aside.
- In another bowl, beat cream cheese, sugar, and vanilla extract until smooth and creamy. Gently fold in the whipped cream until well combined.
- Once both gelatins are fully set, cut them into 1/2-inch cubes using a knife.
- Place a spoonful of the cream cheese mixture in the bottom of each jar. Add a layer of strawberry gelatin cubes, some diced strawberries, and a few mini marshmallows.
- Add another layer of cream cheese mixture, followed by lemon gelatin cubes, diced pineapple, and more mini marshmallows.
- Finish with a final spoonful of cream cheese mixture on top of each jar.
- Refrigerate the assembled jars for at least 1 hour to allow flavors to meld and set.
- Before serving, top each jar with whipped cream, place a marshmallow bunny candy on top, and sprinkle with pastel sprinkles.
