01 - Slice each croissant in half horizontally. Optionally, lightly toast both halves in a preheated oven or toaster for 2 to 3 minutes until just warm and slightly crisp.
02 - Evenly spread softened goat cheese onto the bottom halves of each croissant using a small spatula or butter knife.
03 - Layer thin apple slices neatly over the goat cheese. Drizzle each with 1 teaspoon of honey.
04 - Sprinkle chopped walnuts or pecans and place a handful of arugula or baby spinach over the apples if desired.
05 - Finish with freshly ground black pepper to taste. Place the top halves of the croissants over the fillings and gently press.
06 - Serve immediately while croissants are warm and flaky.
